Cinnamon French toast

French toast (more familiar to many people as ‘eggy bread’) is a popular breakfast in the United States, where it is spiced with cinnamon and nutmeg and served with seasonal berries. To make this a low GI dish, we’ve used multi-grain bread.

Directions

  1. Beat together the eggs, spices and skimmed milk. Season with a little black pepper and pour into a shallow dish. Soak the bread slices in the egg mixture until they are saturated.
  2. Lightly spray a non-stick frying pan with oil and place it over a medium heat. When hot, add the soaked bread slices and cook gently for 2–3 minutes, until golden brown underneath. Flip them over and cook the other side.
  3. Slide the French toast out of the pan onto two warm serving plates. Serve immediately with the fresh berries and a spoonful of fromage frais, dusted lightly with icing sugar.

Variation:

Instead of berries, serve each portion of French toast with ½ sliced fresh peach or 2 fresh apricots, stoned and quartered.

Tip…

Instead of dusting with icing sugar, you might be tempted to drizzle some maple syrup over the top, but a single tablespoon is a whopping 52kcal! And even a teaspoon comes to 17kcal. So if you have a sweet tooth, whisk a teaspoon of granulated artificial sweetener into the egg mixture, unless you’re on Step 5 in which case you can have 1 tablespoon maple syrup.
